INGREDIENTS
SERVES 1
- 1 tbsp White Balsamic Vinegar
- 1 tbsp Extra Virgin Olive Oil
- 1 garlic clove
- 1/4 tsp ground black pepper
- 2 whole-grain bread slice(s)
- 3/4 cup Grape Tomatoes
- 1/3 cup Long English Cucumbers
- 1 shallot(s)
- 15 leaf fresh basil leaves
DIRECTIONS

Whisk together the vinegar, oil, garlic, salt, and pepper in a medium bowl.

Add the bread (use day-old bread of any style), tomatoes, cucumber, and shallot and stir to combine. If possible, let stand at least 20 minutes at room temperature for ingredients to marry.

Toss with the fresh basil and serve.
